1 can coconut milk
1 tablespoon of honey (optional)
1/4 cup chia seeds
diced fruit of your choice (mango, strawberry, banana, kiwi, etc.)
Mix the honey with the coconut milk in a bowl. Add chia seeds. (Please note: I only have about 1/6 cup pictured here)
Stir evenly, cover the bowl and let it sit in the fridge for 4-5 hours.
After removing it from the fridge, you should notice that it has transformed into a thick, pudding like substance and appears quite different now. That’s because chia seeds are “…hydrophilic, absorbing up to 12 times their weight in liquid when soaked. While soaking, the seeds develop a mucilaginous coating that gives chia-based beverages a distinctive gel texture.” (source: Wikipedia)
Top with fruit, or spoon it into another bowl/jar and layer it with fruit.
– Delicious, but a bit too sweet for my liking. Next time I’ll try making it with almond milk or unsweetened coconut milk.
– That being said, it would be a great snack for kids because it’s got fruit and chia seeds, which as we all know are good for the healthy. It’s also fun to see how the chia seeds transform into little balls of gel-like goodness.
